"Wagashi", which means "Japanese Confecrionery", is one of the most popular and beautiful cultures in Japan.

 Wagashi is typically made from natural baded ingredients such as small beans, rices, wheat, and sometimes fruits.

 

Wagashi confectioner started using suger to sweeten Wagashi in modern period, but they just used some fruits and depended on the nauaral flavours of them until around Edo era.

Since the tea ceremony became popoular and established around Muromachi era,  people started to use wagashi in the tea ceremomy. Now people treat their guests with tea and wagashi commonly even when it is not formal tea ceremony.

 

Briefly, there are two types of wagashi in Japan. One of them is Namagashi, which means  wet confectionery. And another one is Higashi, which means dry confectionery. The most popular wet confectionery is Mochi(rice cake). And the most popular dry condectionery is Senbei(rice cracker).

When people use wagashi in tea ceremonies, the wagashi which is used at the time is decided according to the taste of the tea at that time. 

 

 

Gererally, people eat them in their daily life, and they can use them when they want to give a entertainment for their guests. 

Besides, they also can use wagashi for formal greeting situations such as graduation ceremonies and funerals.

 

 

 

All of wagashi are made to enjoy the taste and the appearance.

It is very important to arrange the balance of the taste, smell, colour, and shape of wagashi when people make it.

At the same time, the appearances of wagashi are supposed to be ralated to the season when people eat them. 

Pople are entertained with their mouths and the eyes by wagashi.

In spite of the fact that wagashi are really small basically, it is very difficult to make them.

It is said that it will take some decade years to acquire the skill completely to make wagashi. 

Besides, they have to be traditional to keep the skill from old time. At the same time, they need to be creative to make new menus which meet the needs in the society at the time.
